Add a CommentAs always, Chef Roux's books are inspirational! I'm still waiting to try the mussel soufflé and the harlequin soufflé. My versions may differ a bit from his, but they were definitely inspired by the recipes in this book. Thinking of using cocoa nibs and hazelnuts in the chocolate portion and possibly macadamia nut & white chocolate in the white portion(s).
